Spring is the time to think about camping, especially if you live near the Rocky Mountains like I do. Hubs and I just drove over to the storage unit to check on the camper. It’s still there. Hasn’t been blown away yet by the Chinook winds. We’ve made our camping reservations. Just waiting for the calendar pages to turn so we can hook up the camper and head for the hills.

 

I like to bring at least one pre-made meal to feed our dinner club/camping group. I freeze ahead, then warm in a big cooking pot on the Coleman cook stove or directly on the fire.

 

This is my favorite.

 

Kevin Wagner’s Famous Chili

 

First, brown 3 lbs. of hamburger seasoned with Mrs. Dash Original Blend Seasoning (I sprinkle generously over the top of the hamburger)

Then, start with a large (12 quart) cooking pot and add the following:

5 lb. can of Bush’s Baked Beans

46 oz. can of tomato juice

1/2 cup of brown sugar, stir after adding

1 large sweet onion, chopped

Float a layer of Mrs. Dash Original Blend seasoning

Stir everything together, then add:

Another 46 oz. can of tomato juice

2 packets of Shelby Chili mix

Stir everything together and add:

3 lbs. hamburger browned with Mrs. Dash (you should have already browned)

Simmer for at least 1 to 2 hours, stirring frequently

Yield: 40 cups of chili (or 16 large bowls)
